Cornish Game Hens: Marinated Rock Cornish Hens

List of Ingredients
2 Cornish game hens (1 1/2 lb each) split
1/3 cup soy sauce
1/4 cup oil
1/4 cup brandy or dry sherry
3 cloves garlic, sliced
2 tablespoons sesame seeds, lightly toasted
1 1 inch piece ginger, peel and thin slice
1 tablespoon brown sugar
1 tablespoon fresh lime juice
Recipe
Lay hens skin side down in a glass dish just large enough to hold them in a single layer. Prick each hen several times with a fork. In blender or food processor, blend soy sauce, oil, brandy, garlic, sesame seeds, ginger, sugar and lime juice for about a minute until smooth. Pour marinade over hens, cover loosely with foil, and refrigerate between 6-24 hours, turning occasionally.
Preheat oven to 400ºF. With a slotted spoon, transfer the hens to a 13x9" baking dish, arranging them in a single layer, skin side up. Reserve the marinade. Roast, uncovered, basting with marinade every 15 minutes, until juices run clean and meat is no longer pink, between 35-40 minutes. Serve hot or at room temperature. Serves 4.
