Quail: Roast Quail with Soy Honey Glaze

3 tablespoons soy sauce
1 tablespoon honey
1 teaspoon toasted sesame oil
2 teaspoons balsamic vinegar
1 tablespoon fine chopped fresh chives
4 quail, whole or boned with legs intact
4 strip bacon
1 lemon, cut into quarters
1/4 cup fresh chives, cut into small pieces
1 1/2 teaspoons veg oil
Recipe
In large bowl, mix soy sauce, honey, sesame oil, vinegar, and chopped chives and add the quail. Marinate for 30 minutes or cover and marinate in fridge for up to 6 hrs. Preheat oven to 400ºF. Bring a small saucepan of water to boil over high heat. Reduce heat to medium and simmer bacon for 8 minutes. Strain and dry thoroughly, and set aside. Drain the quail from the marinade, reserving the marinade, and pat the skin dry with paper towels.
Place a lemon quarter inside each quail along with a tbl. of chive pieces and generous sprinkling of pepper. wrap the boiled bacon around the quail and tie in place with kitchen string. In medium roasting pan, heat oil over medium high heat. Brown the quail on all sides, about 5 minutes. Remove from heat, place quail breast-side down, and pour the marinade on top.
Roast the quail, basting occasionally, for 7 minutes. Turn the bird over, baste, and roast another 7 minutes. Remove roasting pan from the oven and place quail on carving board, loosely covered with foil, for about 5 minutes. Discard any extra fat from roasting pan and heat the pan juices over low heat. Discard the kitchen string from the quail, and serve them with or without the bacon, drizzled with pan juices. Serves 2.
