Roasted Beef Ribs & Maple BBQ Sauce

SAUCE:
1 3/4 cups ketchup
1/2 cup pure maple syrup
3 tablespoons balsamic vinegar
2 tablespoons Worcestershire sauce
1 tablespoon dijon mustard
1/2 cup chopped scallion or fresh chives
1 teaspoon cinnamon
1/2 teaspoon ground allspice
1 dash hot sauce
4 pounds beef ribs, cut into individual ribs
Recipe
Prepare sauce: in medium bowl, mix all ingredients for sauce and taste for seasoning. Sauce should have good balance of sweet and savory. Adjust as needed. Place ribs in large bowl and coat the top, bottom and sides with sauce. Cover and refrigerate, turning ribs and basting every few hours or so, for 8 or up to 48 hours.
Preheat oven to 325ºF. Remove ribs from sauce, reserving sauce, and place in large shallow roasting pan, bone side down. Brush ribs with bit of sauce. Roast ribs for 30 minutes. Turn ribs over, baste with additional sauce, and roast another 30 minutes. Turn ribs again, basting with sauce, and roast, basting every 15 minutes or so, til tender, another 45 minutes to 1 hour. If sauce begins to dry out in bottom of pan, add 1/2 cup water to dilute sauce and keep it from burning. Most of sauce will caramelize directly on ribs. Serve hot or at room temp. Serves 4.
