Barley: Barley Cream Soup

4 oz pearl barley
1 3/4 pints chicken or vegetable stock
1/4 pint milk
1/4 pint whipping cream
Salt and pepper
1 oz butter, cut into small pieces
2 tsp fresh parsley, choppedRecipe
Blanch the barley for 1 minute in boiling water then drain. Add the drained barley to the stock and simmer for 2 hours Pass through a fine mouli or liquidise. Add the milk, cream, salt, pepper and the butter. Reheat and serve sprinkled with chopped parsley.
