    Gazpacho: Bertoli Italian Style Gazpacho

    List of Ingredients

    3 cups tomato juice
    2 cups Bertoli tomato and basil pasta sauce
    1 cup peeled, seeded, chopped cucumber
    1/2 cup finely chopped green bell pepper
    1/4 cup thin sliced green onions
    3 tablespoons tarragon vinegar or cider vinegar
    1 clove garlic, finely chopped
    2 tablespoons extra virgin olive oil
    2 tablespoons finely chopped flat leaf parsley
    1 tablespoon finely chopped chives (optional)
    1/2 teaspoon fresh ground black pepper

    Recipe

    In large bowl, combine all ingredients. Cover and refrigerate at least 4 hours. Serve chilled. Serves 6.
