Broccoli: Broccoli Soup w/ Tarragon

1/2 cup diced onion
2 tsp olive oil
1 garlic clove minced
3 cup chicken stock or reduced-sodium chicken broth
2 cup chopped broccoli florets and stems
1 sm red potato peeled, diced
2 tbl minced parsley
1/2 tsp tarragon
1/4 cup nonfat plain yogurtRecipe
Saute onion in olive oil about 5 minutes until tender. Add garlic. Cook 1 minute. Add stock, broccoli, potato, parsley and tarragon. Over medium-high heat, bring to boil. Reduce heat to medium. Simmer 12 minutes or until vegetables are tender. Remove from heat. Stir in yogurt. Serve immediately.
This recipe yields 4 servings.
