Cauliflower: Cauliflower Buttermilk Soup

List of Ingredients
1 teaspoon butter or safflower oil
1 medium onion, chopped
1 large clove garlic put through press
1 tablespoon curry powder
2 cups potato, peeled and diced
6 cups cauliflower florets
4 cups of vegetable broth
2 cups buttermilk
salt and pepper to taste
Recipe
1. Heat the butter in a large, heavy-bottomed soup pot and saute the onion and garlic, with the curry powder, until the onion is tender.
2. Add the carrot, potato, all of the cauliflower, and the broth and bring to a simmer.
3. Cover and simmer 20 minutes. Remove from the heat and puree coarsely in a blender or food processor, in batches.
4. Return to the pot and add salt and pepper to taste. Serve. Serves 4
