Chicken: Chicken Corn Chowder

3 tablespoons butter
3 medium chopped onions
2 cups red bell pepper chopped
1/4 cup flour
9 cups chicken broth
4 cups 1/2 " cubes seeded peeled butternut squash
1 1/2 lbs potatoes peeled and cut into
1/2" cubes
1 1/2 tablespoon fresh thyme chopped
2 bags frozen corn (16 oz)
1 cup whipping cream
4 cups diced skinned roasted chicken
2 cups green onions chopped
1/2 cup plus 2 tablespoons fresh cilantro choppedRecipe
In large pot, add butter and melt over medium heat. Add onions and 1 cup of red pepper. Saute until onions are soft, about 10 minutes. Add flour. Stir 2 minutes. Mix in broth, squash, potatoes, and thyme. Bring to a boil.
Reduce heat to medium low, and simmer uncovered until squash and potatoes are tender, about 12 minutes. Add corn, cream, and remaining 1 cup red pepper. Simmer until corn is tender, about 10 minutes. Add chicken, 1 cup green onions, and 1/2 cup cilantro. Simmer 5 minutes. Season with salt and pepper. Garnish with remaining green onions and cilantro. Makes 4 to 6 servings.
