Chicken: Chicken & Watercress Soup

List of Ingredients
4 cups chicken broth made from leftover roasted chicken
Enough cooked vegetables to make a creamy soup
1 bunch of watercress, cleaned
1 clove of garlic, mashed salt and pepper for taste Recipe
1. Prepare broth.
2. Add to cooked rutabaga, turnip and or parsnips and blend till smooth.
3. Bring to simmer on stove.
4. Add garlic and stir well.
5. Add fresh watercress and bring to rapid simmer.
6. Season with salt and pepper and serve. Serves 4
Comments:
This is a soup that has infinite variations for using leftovers: beef broth, vegetables broth, leftover root vegetables. Add olive oil or sesame oil to change the flavors and jalepeno peppers if you find it too bland.
