Chicken: David's Chicken Soup

List of Ingredients
2 split chicken breasts on bone (1 whole breast)
3 Onions
3 Stalks Celery
1 Leek
2 Tbl Vegatable Oil
1 Parsnip
1 Turnip
3 Qts Water (About)
3 TBL Chicken Broth Powder
1/2 Cup of mini Egg Noodle bow ties
Salt and Pepper to taste
Fresh chopped parsley to taste Recipe
1. Chop onions, celery and leeks to any size you prefer in your soup. (I like larger pieces.)
2. Put oil in heated large pot (6 qt or larger) and cook veggies over medium-high heat until it starts to smell good.
3. Add chicken and cook till slightly browned on both sides. Add water to about 1-2 inches below the top of pot and add chicken stock.
4. Bring to a boil and then cook on low for about 2 hours.
5. Remove Chicken, parsnip and Turnip and set aside to cool.
6. Add noodle bow ties, salt, pepper and chopped parsley.
7. Remove chicken from bone and dice meat into small cubes.
8. Use the other root veggies as side dishes if you like or discard.
9. Add chicken back to pot and check for taste. Noodles need 20-30 minutes.
