    Cold: Cold Russian Beet Soup

    List of Ingredients

    1 jar pickled beets (don't drain) - 16 oz.
    3 cups vegetable broth
    2 tablespoons lemon juice (or to taste)
    2 tablespoons wine vinegar (or to taste)
    6 tablespoons lowfat sour cream
    6 teaspoons chopped chives
    dill weed

    Recipe

    In a food processor, blend beets until they are coarsely chopped. In a large bowl, add the chopped beets, broth, lemon juice and vinegar to taste. Refrigerate several hours. At serving time, ladle soup into bowls, top with 1 tbl. sour cream, and sprinkle with chives and dill. Serves 6.
