Mushroom: Cream of Mushroom Soup

List of Ingredients
1 pound fresh mushrooms (any type), stem and slice
2 ounces dried mushrooms, crushed and soaked
3 cups water
1/2 cup white wine
3 cups skim milk
season salt, white pepper, onion powder -- to taste
garlic powder to taste
Recipe
For a thickener: 1) 1/4 cup Cornstarch mixed with 1/2 cup of Skim Milk - this is approximate and the soup must be eaten immediately. -or- 2) 1/4 cup Flour sauteed in 2 tblsp. of oil until you form a paste. Add 1/2 cup Skim Milk to thin. The soup can be stored afterward.
Soak dried mushrooms in 1 cup of water for at least 1/2 hour. In a large pot bring water to the simmer and add soaked mushroom mixture. In a large pan, saute fresh mushrooms until they just begin to brown. Season, add white wine and bring to a boil. Add mushrooms to water and bring back to the simmer. Add milk and simmer for 30 minutes. Adjust any seasoning and then bring to the boil, add thickener a little at a time and stir constantly until desired consistency is reached. Serve immediately.
