Chicken: Cream of Smoked Chicken & Apple Soup

SOUP:
2 tablespoons oil
1 cup chopped onions
1 cup peeled chopped granny smith apples
1/4 cup flour
5 cups chicken both
3/4 cup paper-thin sliced carrots (2 medium)
3 cups diced smoked chicken or turkey breast -- skin removed
1 teaspoon dijon mustard
1/4 cup whipping cream
GARNISH:
1 tablespoon unsalted butter
1 granny smith apple, peel, core,
cut into paper thin wedges
2 tablespoons chopped fresh chives
Recipe
To prepare soup, heat oil in very large heavy lidded saucepan or pot over medium high heat. When hot, add onions and apples, and saute until softened (3-4 minutes). Stir in flour and cook, stirring, for 3-4 minutes. Add broth and bring to a simmer. Reduce heat to low, cover and cook for 20 minutes. Puree in food processor or blender. Return to saucepan or pot. Add carrots and cook over medium heat, uncovered, for 10 minutes or until tender. Add smoked chicken, mustard, cream and white pepper. Heat just to warm chicken, 2-3 minutes more. (Can be frozen; defrost before continuing and reheat.)
To prepare garnish, heat butter in medium skillet over medium high heat. When hot, add apple slices and cook, tossing, until softened and lightly browned, 2-4 minutes. To serve, ladle soup into 6 bowls. Garnish each serving with some sauteed apples and sprinkle with chives. Serves 6.
