Tomato: Creamy Tomato Basil Soup *

1/3 cup oil
1 chopped onion
1/2 teaspoon crushed garlic
1/4 cup flour
1 1/2 cups chopped tomatoes (seeded, peeled)
3 cups chicken broth
1/2 cup half and half
1 tablespoon fresh basil
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon dillweed
1/4 teaspoon pepper
Recipe
In a large saucepan heat oil over medium-low heat. Saute chopped onion and crushed garlic cloves until tender, but not brown. Stir in flour and cook for 1 minute stirring constantly. Stir in chopped tomatoes, chicken broth, half and half, basil, sugar, salt, dillweed, and pepper. Stir until well blended. Bring to a boil, reduce the heat, and simmer, uncovered, for 20 minutes. Puree in a blender or food processor until smooth. Reheat before serving.
