    Cold: Cucumber Chive Soup w/ Lemon & Dill

    List of Ingredients

    3 medium cucumbers
    1/3 cup chopped chives
    1 cup unflavored nonfat yogurt
    1 cup buttermilk
    2 tablespoons lemon juice
    1 teaspoon dried dill weed
    1 pinch salt
    1 tablespoon chopped chives and minced parsley -- (garnish)

    Recipe

    Prepare cucumbers by peeling and cutting in half lengthwise. With a spoon, scrape out the seeds. Cut cucumbers into 1 inch chunks, then finely chop cucumbers in food processor and drain. In large bowl, stir together cucumbers with all but garnish until blended. Refrigerate until serving time. Serve in glass bowls with a dollop of yogurt and a sprinkle of chopped chives and parsley. Serves 4-6. Best in summer.
