    Bean: Dr. Weil's Smokey Red Bean Soup

    List of Ingredients

    1 pound dried red beans
    6 fresh plum tomaqtoes, peeled, seeded, diced
    1 tablespoon extra virgin olive oil
    1 large onion, chopped
    6 cloves garlic, minced
    8 cups water
    6 ounces baked pressed tofu (smoke flavor), diced
    salt and red pepper to taste

    Recipe

    Rinse the beans and allow them to soak in cold water for 8 hours; drain. Dip tomatoes in boiling water for 15 seconds, col, and peel. Cut tomatoes in half, squeeze the seeds out and discard. Dice the tomatoes. In large soup pot, heat the olive oil over medium heat, add the onions and garlic, and saute until soft. Raise heat to high, add the beans and water, cover, and bring to a boil. Reduce heat, add the tomatoes, and simmer the beans for 2-3 hours until desired tenderness. Add the tofu, season to taste with salt and red pepper, and heat through. Serves 8.
