    Zucchini: Elegant Dilled Zucchini Soup

    List of Ingredients

    6 medium zucchini, peeled and sliced
    2 large onions, finely chopped
    6 shallots, minced
    6 cloves garlic, minced
    4 cups vegetable broth
    salt to taste
    1/4 cup buttermilk
    3/4 cup lowfat sour cream
    1/2 teaspoon dried dill weed

    Recipe

    In a Dutch oven casserole, with cover slightly ajar, simmer together veggies, broth and salt for 40 minutes, or until veggies are soft. Meanwhile, in a bowl stir together buttermilk, sour cream and dill weed; allow to stand at room temperature. With a slotted spoon, remove vegetables to a food processor or blender, and blend until vegetables are pureed. Return pureed veggies to the broth, stir in sour cream mixture until blended and heat through. Do not boil. Can be served hot or cold. Serves 6.
