Frank's hearty Tuscan Soup

List of Ingredients
2 tablespoon oil
1 large can red beans
1/2 cup onion, chopped
1 quart chicken broth
1 lb. escarole or spinach
1 can italian stew tomatoes
1 package frozen pierogies
parmesan cheese
crushed red peppersRecipe
In a soup pot cook the onions in oil until tender. Add broth and tomatoes. Bring to a boil. Add the pierogies, return to boil, boil for 4 minutes. Add beans, rinsed & drained, escarole or spinach torn up with stems removed, for about 3 minutes. Serve with grated parmesan cheese on top. Crushed red peppers are optional.
