Fruit: Honey Apple Soup

6 Apples, cooking pared, cored, and sliced
4 1/4 cups Apple juice divided
1 cup Honey
2 tablespoons Lemon juice
1 tablespoon Tapioca
2 teaspoons Lemon rind grated
Yogurt Recipe
Combine apple slices and 1 cup apple juice in a heavy saucepan; cover and cook until apples are soft, about 15 minutes. Process apples in electric blender container until smooth, or press them through a sieve. Return apple puree to saucepan; add honey, lemon juice, tapioca, and remaining apple juice. Cook over low heat until tapioca is soft and transparent and mixture is thickened. Chill thoroughly. Serve soup very cold; garnish with lemon rind and yogurt. Serves 6.
