    Garlic: Garlic Cream Soup Gratin

    List of Ingredients

    1 medium onion, diced
    12 large clove garlic, quartered
    2 tablespoons butter
    2 tablespoons flour
    3 cups beef broth
    1 cup + 2 tbl. heavy cream
    1 teaspoon lemon juice
    1 teaspoon oregano
    2 tablespoons fresh grated Provolone cheese
    salt, fresh ground pepper and nutmeg
    4 slices French baguette bread

    Recipe

    In a Dutch oven, saute onion and garlic in butter until tender. Stir in flour and cook until golden brown. Add broth and cream. Simmer, covered, for 20 minutes. Check soup for onion and garlic pieces; puree by pressing through a sieve or mashing with a fork. and return to soup. Season to taste with salt, pepper, nutmeg, and lemon juice. Toast bread slices, sprinkle with cheese, and bake at 350ºF until cheese is melted. Ladle soup into bowls, top each bowl with bread slice, and sprinkle with oregano.
