Beet: Golden Beet Soup with Shallots

List of Ingredients
1 pound golden beets, tops removed
1 large onion, minced
6 shallots, finely minced
3 cloves garlic, minced
1 tablespoon butter
3 cups rich vegetable broth
salt and pepper to taste
3/4 cup half and half
sour cream and chives to garnish

If you cannot find golden beets, substitute red beets. Steam beets in a steamer for 30 minutes and allow to cool. When cool, peel beets and puree them in a food processor. Place beets in a Dutch oven casserole. In a skillet, saute onion, shallots and garlic in butter until shallots are soft. Add to the casserole with the broth and seasonings, and simmer mixture for 20 minutes. Add the cream and simmer for 10 minutes longer. Refrigerate until serving time. Serve hot or chilled with a dollop of sour cream and a generous sprinkle of chives on top. Crostinis of Cheese are good accompaniment. Serves 6.
Crostinis of Cheese: Remove crusts from 6 slices of good quality white bread and flatten them slightly with rolling pin. Brush each slice with a little butter and sprinkle with a little grated Parmesan cheese. Cut slices in half on diagonal and place on a cookie sheet. Cover pan with foil until ready to serve. When ready to serve, broil crostinis about 4 inches from the heat until cheese is melted and tops are just beginning to color. Watch carefully, as there are only a few seconds between golden and burnt.
