    Greens: Greek Spinach & Rice Soup

    List of Ingredients

    1 onion
    3 cloves garlic, minced
    4 shallots, minced
    2 tablespoons butter
    5 cups vegetable broth
    2 packages frozen chopped spinach (or 2 lb. fresh, -- clean and chop)
    1 cup cooked rice (1 1/2 if want thick soup)
    4 tablespoons lemon juice
    salt and pepper to taste
    6 tablespoons nonfat plain yogurt
    6 tablespoons chopped chives

    Recipe

    In Dutch oven casserole, saute onion, garlic, shallot and butter until the onion is soft. Stir in broth, rice, spinach, rice, lemon juice and seasoning; simmer mixture for 10 minutes. Serve soup in deep bowls with a tablespoon of yogurt and chopped chives. Do not overcook. Serves 6.

    Croustades of Cheese and Chives:
    6 slices sourdough bread
    6 teaspoons melted butter
    6 teaspoons grated Parmesan cheese
    3 tablespoons chopped chives
    1/2 teaspoon dill weed
    Place bread on a 9x13 inch baking pan. Stir together remaining ingredients and spread evenly on the bread. Broil for a minute or so until cheese is bubbly. Serves 6.
