    Corn: Harvest Corn Chowder

    List of Ingredients

    1 teaspoon olive oil
    1 teaspoon dried thyme -- crushed
    3 cloves garlic -- minced
    1/4 teaspoon pepper
    2 10 ounce pac frozen whole kernel corn
    1 cup loose-pack diced hash brown potatoes with
    onion and sweet peppers
    1 14 1/2 ounce reduced-sodium chicken broth
    1 15 ounce can cream-style corn
    1 cup fat-free milk

    Recipe

    Heat oil in a large saucepan or Dutch oven. Cook thyme, garlic, and pepper in hot oil for 1 minute or till fragrant. Add frozen corn, potatoes, and broth; bring to boiling. Reduce heat and simmer, covered, about 5 minutes or till corn and potatoes are tender. Add canned corn and milk Heat through. Makes 6 (1 1/4 cups) servings.

    SOUTHWESTERN: Substitute 1 teaspoon of ground cumin for the thyme. Add one 4-ounce can chopped green chilies and 3 tablespoons chopped black olives to saucepan along with milk Sprinkle each serving with 1/4 cup shredded reduced-fat Monterey Jack cheese. Serve with baked tortilla chips.

    ITALIAN: Substitute 1 cup water for the milk, and 1 teaspoon dried Italian seasoning for the thyme. Add 2 small zucchini, halved lengthwise and sliced (2 cups) and 1/2 cup dried tomatoes, snipped, with the frozen corn. Stir in 12 ounces smoked turkey sausage, quartered lengthwise and sliced, with the canned corn heat through.

    ASIAN: Substitute 1 cup of reduced-sodium chicken broth for the milk and 1 teaspoon ground cumin for the thyme. Increase oil to 1 tablespoon. Add 1 medium red sweet pepper, diced (3/4 cup); 4 medium green onions, sliced (1/2 cup); and 1 to 1 1/2 teaspoons curry powder to saucepan with cumin and garlic. Add 1/2 pound medium cooked peeled shrimp (1 1/2 cups) with canned corn.

    NOTES : Early corn chowder recipes, dating back to the American colonies, called for scraping corn cobs with a sharp knife to release the kernels and "milk" into the soup. In this shortcut method, frozen corn and canned cream-style corn combine with a surprise ingredient-hash brown potatoes-for an equally creamy result in less than 10 minutes.
