    Cauliflower: Hearty Bacon-Cauliflower Soup

    List of Ingredients

    4 ounces bacon, cut into thin strips
    1-1/2 teaspoons all-purpose flour
    1 onion, chopped
    2 tablespoons minced garlic
    1 head cauliflower, cut into bite-size pieces
    2 bay leaves
    1 tablespoon thyme
    3 cups chicken broth
    3 cups milk
    1 teaspoon salt
    1/4 teaspoon pepper
    1/2 cup grated Cheddar cheese

    Recipe

    In a Dutch oven, cook bacon for 5 minutes or until cooked but soft.  Stir in flour, onion, and garlic; cook for 5 minutes or until soft.  Add cauliflower, bay leaves, thyme, broth, and milk; bring to a boil.  Simmer 10 to 15 minutes or until cauliflower is tender.  With a slotted spoon, transfer solids to a blender; purée.  Return to Dutch oven.  Add more milk, if necessary.  Stir in salt and pepper; heat through. Ladle into bowls; sprinkle with cheese.
