    Lentil: Sour Lentil Soup

    1/2 pound lentils, rinsed and sorted
    8 cups water
    1/4 cup chopped peeled onion
    1 clove garlic, crushed
    1 tablespoon olive oil
    1 teaspoon ground coriander
    1/2 cup water
    1 tablespoon flour
    1/2 teaspoon vinegar
    1 teaspoon salt
    1/2 teaspoon ground black pepper

    Recipe



    Combine lentil in a large saucepan with first addition of water, onion, garlic, olive oil and coriander. Bring to a boil, reduce heat, cover, and simmer on low heat for 30 minutes, or until lentils are soft. In a small bowl combine remaining water and flour until well mixed. Pour gradually into boiling soup, stirring constantly, until slightly thickened. Add vinegar, salt and pepper. Simmer gently for 5 minutes. Serve hot.
