Corn: New England Corn Chowder

4 slices bacon, diced
1 medium onion, chopped
4 cups diced potatoes, peeled
1 cup water
3 cups milk
2 cups fresh corn, cut from cob
1/4 teaspoon salt
fresh ground black pepper
2 tablespoons chopped fresh parsley
Recipe
Fry bacon for 2 minutes. Add onion and continue to fry until onion is soft but not browned. Add potatoes and water. Simmer, covered, about 20 minutes or until potatoes are tender. Add milk, corn, salt and pepper; continue cooking over low heat for 10 minutes. Serve sprinkled with parsley.
