New Year's Soup

List of Ingredients
2 cups diced ham
4 celery ribs, chopped
1 large onion, chopped
4 carrots, chopped
4 cloves garlic, minced
4 cans black eyed peas, undrained
4 cans chicken broth
2 cans stewed tomatoes, undrained
2 cans diced tomatoes, undrained
2-8 ounce cans tomato sauce
3 cups fresh spinach, broken up
2 tablespoon parsleyRecipe
In a large soup pot, saute ham, celery, onions, carrots & garlic until tender. Stir in the rest of the ingredients except the spinach. Bring to a boil. Cover and simmer for 1 1/2 hours.
Stir in the spinach and heat for 10 more minutes. Makes 20 cups.
