Pea: Pamela's Pea Soup

List of Ingredients
1 lb. split green peas or use half split green/half sweet yellow
3 quarts water, more if needed
1 tablespoon fresh chopped garlic
ham bone from a smoked shoulder
1/2 cup carrots, diced
2 cans of chicken stock or 8 bouillon cubes, ham or chicken flavored
1 cup celery, chopped
1 large onion, chopped
2 bay leaves
1 cup barley
1 sweet potato, chopped in bite size pieces, add at the last 20 minutes
salt & pepper, to taste
Recipe
Wash and sort peas, add water and boil for 2 minutes, remove from heat and let sit at least an hour. Add all but sweet potatoes and bring just to a boil. Simmer for 3 hours, low simmer. Add sweet potato/yam then when the sweet is all most done, take off burner and let it sit for another 20-30 minutes.
Variations: Depending on how you prefer you soup you can use lots of meat from ham shoulder, or you can puree it then add more cooked vegetables. You can add garlic, onion powder, dill, parsley.
