    Potato: Amish Potato Chowder

    List of Ingredients




    4 cups diced potatoes
    1/2 cup chopped onions
    1 cup grated carrots
    1 tsp salt
    1/4 tsp pepper, optional
    1 tbsp parsley flakes
    4 vegetable boullion cubes
    6 cups soymilk
    4 tbsp vegan margarine
    1/2 cup flour

    Recipe



    In a large pot combine potatoes,onions, carrots, salt, pepper, parsley and boullion. Add enough water to cover.Cook until vegetables are tender(about 15 minutes).DO NOT DRAIN.

    Heat soymilk. Remove 1 1/2 cups heated milk and combine with vegan margarine and flour.Return to milk. Cook until thickened and add to vegetables.
