4 cup diced potatoes
1 onion chopped
1 cup chopped celery
1 x carrot sliced
1 jar Hormel real bacon pieces - (2 oz)
4 tbl butter or margarine
1 cup chicken broth
2 cup milk
1/4 tsp salt
1/8 tsp freshly-ground black pepper
Finely-chopped parsley Recipe
In 3-quart microwave-safe casserole, combine potatoes, onion, celery, carrot, bacon pieces, butter, and chicken broth. Cover loosely with plastic wrap. Cook at HIGH 13 to 15 minutes or until potatoes are tender; stirring once.
Stir in milk, salt, and pepper. Recover. Cook at HIGH 8 minutes or until heated through. Sprinkle parsley over top.
This recipe yields 10 (1 cup each) servings.
