Tomato: Puree of Tomato & Pear Soup

List of Ingredients
2 large onions, chopped
4 shallots, minced
2 cloves garlic, minced
4 tablespoons butter
4 medium carrots, peeled and grated
1 large potato, peeled and chopped
3 ripe pears, chopped, peeled
2 pounds tomatoes, peeled, seeded and chopped
6 cups vegetable broth
salt to taste
Recipe
In dutch oven casserole, saute onions, shallot, garlic and butter until onions are transparent, about 10 minutes. Add remaining ingredients to the pan and simmer mixture, with cover slightly ajar, for 30 minutes or until veggies are tender. In food processor, puree soup in batches. Return to the pan and heat through. Serve with a teaspoon of sour cream and a sprinkling of chopped chives. Serves 8.
