Peppers: Roasted Red Pepper Soup

1 medium onion, chopped
2 tablespoons butter
4 cloves garlic
2 large bell peppers roasted, chopped
2 tablespoons thyme, chopped
salt & pepper, to taste
1/2 cup white wine
2 cups chicken stock
1 cup heavy cream
Recipe
Over medium heat, sautÈ onion in butter until soft. Add garlic, red pepper, thyme, salt, and pepper. Add wine and scald. Lower heat and add chicken stock and cream. Cook 3 to 5 minutes, remove from heat. Put in blender and blend until smooth. Return to saucepan and cook for 5 minutes. Serve right away.
