    Tomato: Tomato Buttermilk Soup

    List of Ingredients

    1 1/2 cups coarse chopped carrots
    1 1/2 cups coarse chopped onions
    1 tablespoon minced garlic
    1/4 teaspoon salt
    1/8 teaspoon pepper
    2 teaspoons curry powder (optional)
    5 cups coarse chopped tomatoes (3 lb)
    4 cups chicken broth
    1 cup buttermilk

    Recipe

    Spray a 3-quart saucepan with nonstick cooking spray. Over medium heat cook carrots and onions until slightly browned, about 4 minutes. Add minced garlic and if using, curry powder; cook 1 minute. Stir in tomatoes and chicken broth, salt and pepper. Bring to boil, reduce heat, cover and simmer 25 minutes or until carrots are very tender. Process in small batches in food processor or blender until smooth. Pour into a large bowl, adding buttermilk. Garnish servings with chopped tomatoes and parsley. Can be served hot or chilled. Makes 8 cups.
