Tomato: Cream of Tomato

3 lb tomatoes
1 med onion
1 sm carrot
1 sm clove garlic
2 tbl unsalted butter
3 tbl flour
1 qt chicken stock
Salt and pepper
1 tbl sugar
1 cup light cream Recipe
Coarsely chop the tomatoes, onion, carrot and garlic.
Melt the butter in an 8-quart soup or stock pot. Add the onion, carrot and garlic and cook slowly until lightly browned.
Add the flour and mix well. Add the stock and tomatoes, cover, leaving the lid askew, and cook over low heat for 1 hour.
Puree soup mixture in a blender or food processor and then pass through the medium blade of a food mill. Return to the pot. Season to taste with salt, pepper and sugar. Add the light cream and reheat slowly to serve.
