    "We had this soup at a restaurant once and loved it, so I went home and tried to reproduce it. It came out very similar to the soup at the restaurant. "

    List of Ingredients




    2 cup onions, chopped
    1 cup celery, chopped
    1 medium hot pepper, chopped
    1/2 cup green pepper, chopped
    4 large cloves garlic, minced
    8 zucchini, sliced 1/8" thick
    2 bay leaves
    1/2 teaspoon oregano, dried
    1 teaspoon basil, dried
    1 teaspoon salt, to taste
    1/2 teaspoon pepper, to taste
    1/4 cup sugar, scant to taste
    1-46 ounce can tomato juice
    1-46 ounce can chicken broth
    2 teaspoon olive oil
    5 medium tomatoes, peeled, seeded and chopped or
    1-28 ounce can whole tomatoes chopped

    Recipe



    Fry the onions, celery, peppers, garlic and herbs in the olive oil until tender. Add tomato juice and broth. Simmer 20-30 minutes. Add salt, pepper and sugar to taste. Add tomatoes and zucchini and simmer until tender. Adjust seasonings as desired.
