Baked Turkey Croquettes

2 tablespoons butter or margarine
3 tablespoons all-purpose flour
3/4 cup milk
2 cups chopped cooked turkey
1 egg yolk lightly beaten
1/4 teaspoon salt
1 egg
2 teaspoons water
1/2 cup bread crumbs
1/4 teaspoon ground sage
2 tablespoons butter or margarine melted
Recipe
In a large skillet, melt 2 tablespoons butter. Add flour, stirring until well blended. Cook, stirring constantly, for 1 minute. Slowly add milk; cook, stirring constantly, until boiling. Let sauce cool. Add turkey, egg yolk, and salt. Form into 12 small cones.
Preheat oven to 350°F. Spray a baking sheet with non-stick vegetable spray.
In a small bowl, combine bread crumbs and sage. In another small bowl, combine egg and water, beating until blended.
Roll cones in bread crumb mixture, then dip in egg mixture, and roll again in bread crumb mixture. Place on prepared baking sheet. Drizzle with melted butter. Bake for 40 minutes. Serves 6
