Braised Turkey Breast w/ Apple

2-1/2 pounds boneless turkey breast
1 tablespoon butter or margarine
1 tablespoon vegetable oil
1 clove garlic, minced
2 tablespoons brandy
1 cup dry white wine
1 tablespoon chopped parsley
1/2 teaspoon thyme
3 cucumbers, peeled, seeded and cut into 1/2-inch pieces
1 apple, peeled, cored and cut into 1/2-inch slices
1 10-ounce package snow peas, thawed
1/3 cup heavy cream
1/2 teaspoon salt
1/8 teaspoon pepper
Recipe
Cut turkey into 2-inch pieces. In a large skillet combine butter, oil, and garlic; heat until butter melts. Add turkey, a few pieces at a time, and cook until browned. Remove browned turkey pieces to a 4-quart Dutch oven.
When all the turkey is browned, add brandy to the skillet and deglaze. Add wine, stirring up all the brown pieces. Pour over the turkey in Dutch oven. Add parsley and thyme. Cover and simmer for 10 minutes. Add cucumbers, apple, and snow peas. Cover and simmer for 15 minutes or until turkey is done.
Drain the juices from the turkey into the skillet. Cover turkey and vegetables to keep warm. Boil the juices until reduced to about 1 cup. Add cream and boil until reduced to about 1 cup. Stir in salt and pepper. Arrange turkey and vegetables on a heated serving platter. Pour sauce over the top. Serve immediately.
