Braised Turkey Breast w/ Apple

2-1/2 pounds boneless turkey breast
1 tablespoon butter or margarine
1 tablespoon vegetable oil
1 clove garlic, minced
2 tablespoons brandy
1 cup dry white wine
1 tablespoon chopped parsley
1/2 teaspoon thyme
3 cucumbers, peeled, seeded and � cut into 1/2-inch pieces
1 apple, peeled, cored and cut into 1/2-inch slices
1 10-ounce package snow peas, thawed
1/3 cup heavy cream
1/2 teaspoon salt
1/8 teaspoon pepper
Recipe
Cut turkey into 2-inch pieces. In a large skillet combine butter, oil, and garlic; heat until butter melts.� Add turkey, a few pieces at a time, and cook until browned.� Remove browned turkey pieces to a 4-quart Dutch oven.
When all the turkey is browned, add brandy to the skillet and deglaze.� Add wine, stirring up all the brown pieces.� Pour over the turkey in Dutch oven.� Add parsley and thyme.� Cover and simmer for 10 minutes.� Add cucumbers, apple, and snow peas.� Cover and simmer for 15 minutes or until turkey is done.
Drain the juices from the turkey into the skillet.� Cover turkey and vegetables to keep warm.� Boil the juices until reduced to about 1 cup.� Add cream and boil until reduced to about 1 cup.� Stir in salt and pepper. Arrange turkey and vegetables on a heated serving platter.� Pour sauce over the top.� Serve immediately.
