Turkey Croquettes

4 tablespoons butter
1/3 cup flour
1 teaspoon salt
1/2 cup milk
2 cups finely chopped cooked turkey
1 tablespoon grated onion
1 tablespoon lemon juice
1 teaspoon dried tarragon
1 egg
1/2 cup fine dry breadcrumbs
1/3 cup oil
Recipe
Melt butter in 2 quart saucepan over moderate heat. Blend in the flour and salt stirring constantly. Gradually stir in milk and cook, continuing to stir until the mixture thickens. Remove from heat, stir in turkey, onion, lemon juice and tarragon. Pour mixture into a buttered 8"x8"x2" pan, spreading evenly. Chill in freezer for 15 minutes or until stiff enough to shape into 4 oval patties. Beat the egg lightly. Heat the oil in 12 inch skillet over moderate-high heat. Dip each croquette into egg and then the bread crumbs. Place in skillet and fry until they are nicely browned -- about 6 minutes on each side. (I sometimes serve with leftover turkey gravy).
