Beans & Rice: Cajun Red Beans & Rice

3/4 pound cooked hot Italian sausage
3 cans red beans, drained
1/2 cup diced green bell pepper
1/2 cup diced yellow bell pepper
1 teaspoon oregano
1 teaspoon thyme
1 cup chopped onion
1 can tomato sauce
2 cloves minced garlic
1 tablespoon dry sherry
1/3 cup sliced green onion
6 cups hot cooked rice
Recipe
In large skillet, brown the sausage and onions over medium high heat for 3 minutes, stirring frequently; drain. Stir in beans, tomato sauce, peppers, garlic, oregano and thyme. Reduce heat to low and then simmer for 15 minutes, stirring occasionally. Stir in sherry and then serve over rice. Garnish with green onions.
