    Supper Salad: Chicken Taco Salad

    List of Ingredients

    2 tablespoons oil
    4 flour tortilla -- cut into thin strips
    4 chicken breast halves without skin -- cut into thin strips
    1 package taco seasoning mix
    1/4 cup water
    4 cups greens
    1 medium tomato -- chopped
    1 small onion -- chopped
    1 can black beans -- drained and rinsed
    1/4 cup ranch salad dressing
    1 cup shredded lettuce
    1/4 cup salsa

    Recipe

    Heat 1 Tbl. oil in skillet over medium high til hot. Add tortilla strips; cook and stir 6-8 minutes or til crisp and brown. Remove from skillet and set aside. Add 1 tbl. oil to skillet, then add chicken. Cook and stir til browned. Add taco season mix and water. Reduce heat to medium and cook 3-4 minutes or til chicken fully cooked and water absorbed. In large bowl, combine greens, tomato, onion, beans and dressing; toss gently. Spoon salad onto individual plates and arrange chicken over salad. Sprinkle with cheese and tortilla. Serve with salsa. Serves 4.
