    Skillet: Greek Style Chicken & Penne

    List of Ingredients

    2 cups uncooked penne pasta
    1 tablespoon butter
    1/2 cup chopped red onion
    1 teaspoon finely chopped garlic
    1 pound chicken stirfry meat
    14 ounces artichoke hearts, drain, coarse chop
    1 medium tomato, chopped
    1/2 cup feta cheese, crumbled
    2 tablespoons chopped fresh parsley
    1 teaspoon dried oregano leaves

    Recipe

    Cook pasta according to package directions, then drain. Meanwhile, in 10 inch nonstick skillet, melt butter until sizzling, then add onion and garlic. Cook over medium high heat for 2 minutes. Add chicken and continue cooking, stirrong occasionally, until golden brown (about 5-6 minutes). Reduce heat to medium-low. Add cooked pasta and all remaining ingredients; toss gently. Cook until heated through (2-3 minutes). Season with salt and pepper. Serves 4.
