One Dish Rice & Black-eyed Peas

4 slices bacon, cut 1/2" pieces
2 cups instant rice
10 ounces frozen chopped spinach, thaw, drain
14 ounces chicken broth
15 ounces black eyed peas, drained
1/2 cup shredded cheddar cheeseRecipe
In 12" nonstick skillet cook bacon over medium hat, stirring occasionally, until crisp (3-5 minutes). Drain. In same skillet, add rice, spinach and broth. Cover; continue cooking until rice is tener and liquid is absorbed (4-6 minutes). Stir in black eyed peas. continue cooking until heated through, 1-2 more minutes. Season with salt and pepper. Sprinkle with cheese. Serves 4.
