Veggie: Oven Fried Eggplant w/ Lemon & Chives

1 cup plain nonfat yogurt
2 tablespoons lemon juice
1/4 cup chopped chives
1/2 cup savory cracker crumbs
1/2 cup grated parmesan cheese
1 eggplant, peeled and cut 3/8" slices
Recipe
Sprinkle eggplant with salt and pepper. In bowl, stir together yogurt, lemon juice and chives until blended. In a rimmed plate, stir together crumbs and parmesan cheese. Brush eggplant on both sides with yogurt mixture and coat on both sides in crumb mixture. Place eggplant slices, in one layer, on a greased jelly roll pan and bake at 400ºF until golden brown, about 20 minutes. Carefully turn and brown other side (about 10 minutes). Serve with a splash of lemon or a spoonful of Five Minute Tomato Sauce. Serves 8.
Five Minute Tomato Sauce
6 cloves garlic, thinly sliced
2 tablespoons olive oil
1 can (1 lb) stewed tomatoes, chopped -- don't drain
1/4 teaspoon sweet basil flakes
2 teaspoons onion flakes
1/4 teaspoon italian herb seasoning
1 teaspoon sugar
1 shake red pepper flakes
salt and pepper to taste
Saute garlic in oil for 30 seconds. Add the rest of ingredients, cover pan and simmer sauce for 5 minutes. Makes 2 cups sauce.
