Beans & Rice: Red Beans and Rice

List of Ingredients
3 tablespoons olive oil
1 cup onion -- finely chopped
1 1/4 cups dried red beans -- cooked tender,drain
1 1/2 cups celery -- finely chopped
2 cloves garlic -- minced
1 1/2 teaspoons freshly ground pepper
1 teaspoon fresh thyme -- finely chopped
1 teaspoon fresh oregano -- finely chopped
1 1/2 teaspoons Tabasco sauce
1/2 teaspoon cayenne
1 pound sausage -- cut in 1/2" slices
2 teaspoons salt
2 cups long-grain rice -- cooked
Recipe
Heat olive oil in large pot and saute onion til soft. Add beans and all remaining ingredients except salt and rice. Add enough water just to cover. bring to boil, cover and lower heat to simmer. Cook, stirring occasionally, for 30 minutes. Add more water as needed. Season with salt and serve on bed of rice. Serves 6.
