Freezing Fruits

Blueberries freeze very well. Wash them under running water and drain or dry them well in warm air before placing on cookie sheets to freeze. Store in ziplock bags. Frozen blueberries can be substitutes for fresh in any recipe such as pancakes, muffins, etc. When frozen in large bag, simply remove amount needed.
Rhubarb: Cut rhubarb into pieces about half inch long and freeze fresh in heavy plastic bags. Remove from bag as needed throughout the year.
Peaches: blanch fruit in hot water for a few minutes, drain hot water and then plunge blanched peaches into cold water. Skins will slip off easily. Apply fruit fresh or lemon juice to prevent discoloration and sprinkle with sugar. Remove air pockets before closing.
