The best beans for perserving are ones that are slightly immature. Green beans should be long and slender, with tiny seeds. Harvest beans late in the day. Foliage should be dry, as harvesting beans from wet plants may cause developing crop to rust. Fastest and best way to preserve for later use is by freezing. Trim ends of beans. Wash, drain, pat thoroughly dry. Pack in gallon-size freezer bags and press out the air. Seal and freeze. Beans will retain good quality in freezer for up to 6 months. You do not need to blanch them first. Frozen beans should be cooked by steaming or stir-frying for best flavor and texture.
