    Spicy Pear Chutney

    List of Ingredients

    1/2 c Cider vinegar
    3/4 c Loosely packed light brown sugar
    1/4 c Peeled and chopped onion
    1/4 c Chopped sweet red pepper
    1/2 c Raisins
    1 tb Chopped garlic
    3 tb Peeled and chopped fresh ginger
    1/2 ts Salt
    1/2 ts Cayenne pepper
    6 Pears, peeled, cored, and sliced 1/4-inch thick

    Recipe

    In a saucepan, bring the vinegar and sugar to a boil. Add all the remaining ingredients except the pears and simmer five minutes. Add the pears and simmer an additional five minutes before removing from the heat. Cool 15 minutes, then transfer to a clean container and refrigerate up to 2 weeks. Yield: 3 cups
