10 large tomatoes, peeled, seeded, chopped
6 large onions, chopped
5 medium bell peppers, finely chopped
2 large red bell peppers, finely chopped
2 hot red peppers, seeded, chopped
4 cinnamon sticks
2 tablespoons whole cloves
6 medium ripe pears, peeled, chopped
6 medium ripe peaches, peeled, chopped
4 cups sugar
2 cups white vinegar
2 tablespoons salt
Recipe
In a large kettle, bring tomatoes to a boil. Add onions and peppers. Place cinnamon and cloves on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add to kettle. Cook until vegetables are tender. Stir in pears, peaches, sugar, vinegar and salt. Cook until fruit is very tender. Discard spice bag. Ladle hot mixture into hot jars. Adjust caps. Process for 20 minutes in a boiling-water bath. Remove jars to wire racks to cool completely. Yield: 12 pints.
