Mustard: Lime Mustard with Coriander

List of Ingredients
2 1/8 cups white mustard seeds, ground
2 tablespoons mustard powder
2/3 cup white wine vinegar
1/4 cup honey
1/4 cup sugar
2 teaspoons salt
2 teaspoons ground coriander seeds
grated rind of 1 lime
2 1/4 tablespoons lime juice
Recipe
In bowl, combine ground mustard seeds and mustard powder with the water. Allow to marry for 3 hours. Transfer mixture to a food processor, and gradually add the other ingredients except the lime juice, while processing. Sample the mixture and add enough of lime juice to make a smooth mixture. Spoon into sterilized jars and seal. Store in fridge for several months. Makes 2 cups.
