Jam: Butterscotch Peach Jam

6 cups peeled, cored and chopped peaches
1/3 cup lemon juice
5 cups brown sugar
Recipe
Prepare preserving jars. Combine peaches and lemon juice in preserving pot. Crush fruit with potato masher. Bring to boil over medium heat, cover and simmer for 10 minutes, stirring occasionally. Stir in brown sugar; increase heat to medium high and cook, stirring often, for about 20-25 minutes or until slightly thickened. Test for set if desired. Remove from heat and stir jam for 3-5 minutes. Skim off foam if needed. Ladle the jam into hot, sterilized jars, leaving 1/2" head space. Wipe the rims clean. Seal according to manufacturer's directions. Process jars in boiling water bath for 10 minutes. Makes 5-6 8-oz. jars.
